My delicious hand-made sausage roll is great for the low carb lunch box, lunch on the go or with a small salad for a light lunch.

Made with Lincolnshire sausage meat (90% Pork) and wrapped in my low carb shortcrust pastry.

Description

I really missed pies and pastries so a low carb sausage roll was pretty high up on the ‘to do’ list.

I use a high meat content Lincolnshire sausage meat (90% pork) that contains just 1.2g carbs then wrap it a a 3mm layer of my low carb puff pastry bringing the whole carb count to 5.5g per sausage roll – with 18g of fibre. A branded pre-packed cooked sausage roll can be around 32g carbs with just 2.3g of fibre.
