Remember the days of a Lemon Curd sandwich to keep you going till meal time?
Well, now you can recreate those memories but in a low carb way.
Being a bit of a purist (and a fussy nit picker) granulated sweetener just doesn’t make a nice curd so I tried just cutting the sugar down by 2/3rds resulting in a lemony, buttery curd.
It’s quite versatile so you can spread it on your toast, make lemon meringue, add it to yoghurt or make a lemon curd sandwich.
